hi from cork, happy new year to ye all. i am glad i came across this site it seems to be just what da doctor ordered. i am looking for some good free range organic pigs hindquarters, i am keen to try my hand at curing and smoking myself, so any help would be well appreciated. :D thanks lads and lassies

Hello Stephen,

If you check out Amazon there are a few good books on smoking and curing, I recently bought a couple by Paul Peacock and they are very user friendly with some good curing recipes. Are you going to buy weaners and get them slaughtered or buy the hams? I love cured ham and you can't beat the stuff done at home.
