Freezing potatoes

Postby jeanht on Tue Jul 08, 2008 10:30 am

My first lot of potatoes are starting to turn green so I'm going to cook them all and freeze them (the non-green ones that is).

I've read that freezing them as mash potato is ok. Also to cut them up, par boil them and freeze them - then fry/roast them from frozen.

Any other ideas?
